NOTE: FROZEN CROISSANT DOUGH IS VERY DELICATE and requires special care to reach the right dough rise and layers.
Let the product defrost and proof on a baking tray for 60- 90 minutes in a warm area in your kitchen. Cover the tray with plastic film to increase the humidity and achieve a better dough rise.
Preheat the oven to 220 °C
Place the tray in the oven for 16-20 minutes until the desired color and crust is reached. Tip: Lower the heat to 180°C after 5 minutes for the remainder of the baking cycle. The initial high heat will help the croissant rise.
Rotate the tray halfway through baking.
Remove croissants from the oven and let cool (on a wire rack if possible) for a few minutes before serving.
Store in a freezer at -18°C
Once defrosted, product should not be refrozen. Otherwise refrigerate for a maximum of 24 hrs
